    This coffee is a good example of an increasingly common trend for Colombian processing. This trend is to conduct a controlled ferment for a longer period than usual and to dry it longer. This coffee utilises a 2 stage drying process which sometimes takes more than a month to complete, this pays off as it leaves the coffee more uniform and therefore easier to roast and brew.

    The processing is also clean enough that it still tastes washed with the only quality of its anaerobic processing being heightened green grape notes.
