    Tasting Note

    Papaya & honeydew sweetness, long lasting and distinct strawberry jam cheesecake finish. Very creamy and sweet through milk and alt milks.

    We buy this coffee every year and the milk coffees made from this years crop are among the best we've ever tasted.

    Natural processing presents higher risks due to less control of fermentation and is usually only undertaken by well-funded larger farms in Colombia. Eduin Hernandez is the exception to this rule, on his small 1.5 hectare farm Alta Bonita in Tolima he only does natural and honey processed coffee.

    For Eduin, it was a risky bet that has paid off and allowed him to achieve specialty cup quality even with his limited on-farm infrastructure. In the short time since December 2017, Eduin has been experimenting with processing and has been earning nearly twice the Colombian commodity price.
